Here is a flavoring paste made with candied citrus fruits and vanilla, ideal for aromatizing leavened doughs. Once ready, you can store this flavoring mix in the fridge, sealed in an airtight pot, for about 1 month.

Servings: 800 gr of Flavoring Paste

Ingredients

  • 100 gr Water
  • 100 gr Granulated Sugar
  • 5 gr Salt
  • 100 gr Inverted Sugar or 80gr of acacia honey
  • 100 gr Glucose Syrup
  • 200 gr Candied Orange Peel
  • 30 gr Grated orange zest
  • 30 gr Grated lemon zest
  • 10 gr Vanilla

Directions

  • Boil water, salt, and all sugars (granulated sugar, inverted sugar, glucose syrup)
  • Pour the boiling syrup into a blender with the rest of the ingredients and blend into a fine puree.
  • Store in an airtight jar in the fridge for up to 10/15 days

Notes

You can use this paste for flavoring leavened dough and add approximately 25gr of paste for each kg of flour
